Amaranth puri is a deep fried bread made from amaranth/rajgira flour that can be consumed during fasting. It goes very well with aloo sabzi and green chutney

Take rajgira flour, salt, red chilli powder and ghee in a mixing bowl and mix them very well.

Now add warm water and knead the dough. Let it rest for 10 minutes.

Knead the dough for one more minute. Divide it in equal portions.

Roll the puris and deep fry them in hot oil on medium high flame till crisp and brown.

Serve hot puris with aloo sabzi and chutney.

For aloo sabzi, firstly peel and dice the boiled potatoes.

Heat oil or ghee in a pan on medium heat.

Add cumin seeds and let them crackle.

Now add chopped green chillies and saute for few seconds.

Add in the red chilli powder, cumin powder and black pepper powder. Saute well.

Then add tomato puree and saute, till it cooks well and starts leaving the oil.

Add salt and diced potatoes. Mix well.

Cover and let it cook for 1-2 minutes.

Garnish with chopped coriander.

Serve aloo sabzi with hot rajgira puris.
