Ingredients

4 servings
  1. 2/3 bunchKomatsuna
  2. 150 gramsKing oyster mushrooms
  3. 4Cherry tomatoes
  4. 1Olive oil
  5. 1Salt
  6. Japanese-style dressing
  7. 1 tspSoy sauce
  8. 1/4 tspSalt
  9. 1 tspApple cider vinegar
  10. 1and 1/2 teaspoon Maple syrup
  11. 1/4 tspPowdered kombu
  12. 1/2 tspGrated onion
  13. 1and 1/2 tablespoon Sesame oil

Steps

  1. 1

    Rinse the komatsuna spinach and soak in water.

  2. 2

    Slice the king oyster mushrooms into 1-cm thick slices.

  3. 3

    Add the olive oil to a frying pan and stir-fry the mushrooms, seasoning with a little salt.

    Combine the dressing ingredients in a bowl and mix well.

  5. 5

    Chop the cherry tomatoes into desired sizes.

  6. 6

    Drain the komatsuna spinach and transfer to a plate. Garnish with the mushrooms and cherry tomatoes.

    Drizzle with the dressing to finish.
