One of the must have’s for Bijoya is namkeen alongwith Mithai. I made Nimki
Steps

In a bowl add Maida, Rice flour, salt, nigella seeds and oil and mix well.

Add adequate water to make a soft dough. Rest covered for 15 mins

In a kitchen top roll out the small dough with rolling pin, fold half and fold again to make a small cone shape, press the triangle with the rolling pin. Complete the batches

In a pan heat oil and deep fry in batches on moderate flame. Set aside
- 5
Serve with Tea and enjoy Dussehra / Bijoya
