Cooking Instructions
- 1
Preheat oven to 400°F. Arrange turkey wings in single layer in lrg roasting pan. Spread onion, carrots and celery evenly over turkey layer. Roast 1 1/4-1/2 hr.
- 2
Place roasted turkey and vegetables in 5 quart stock pot. Pour 1 c water into roasting pan. Stir, scraping any browned bits loose from roasting pan. Pour all into stockpot.
- 3
Add 6 c chicken broth to stockpot. Add thyme and bring to boil, then reduce to medium low. Simmer, uncovered, for 1 1/2 hrs.
- 4
Set wings aside and let cool. May want to skin and save meat for another use.
- 5
Strain contents of stockpot thru strainer into a 3 quart sauce pan. Press vegetables into strainer to extract more broth into saucepan. Discard vegetables & bring to gentle boil.
- 6
In medium bowl, whisk flour into remaining 2 c chicken broth until smooth. Gradually whisk into turkey broth. Continue to simmer on low until thickens (3-4 minutes).
- 7
Remove from heat. Stir in butter and pepper. Serve or prepare for freezer or refrigerate.

California Farm Turkey Gravy California Farm Turkey Gravy
You can make lots of mild turkey gravy from the turkey trim, organs, wingtips, and backbone, and it freezes well. Plus you get to eat the whole bird. I usually post this recipe when making turkey, but since you can make it just as well from leftovers and turkey carcass, here it is for reference. Freezes well all year.#GlobalApron Hobby Horseman -
