Ingredients

  1. 6turkey wings
  2. 2med onions, quartered
  3. 3/4 ccarrots, chopped in lrg pieces
  4. 3stalkes celery, cut in 2 inch pieces
  5. 1 cwater
  6. 1/2 tspthyme
  7. 2 quartschicken broth
  8. 3/4 cflour
  9. 2 Tbsbutter
  10. 1/4 tspblack pepper

Cooking Instructions

    Preheat oven to 400°F. Arrange turkey wings in single layer in lrg roasting pan. Spread onion, carrots and celery evenly over turkey layer. Roast 1 1/4-1/2 hr.

    Place roasted turkey and vegetables in 5 quart stock pot. Pour 1 c water into roasting pan. Stir, scraping any browned bits loose from roasting pan. Pour all into stockpot.

    Add 6 c chicken broth to stockpot. Add thyme and bring to boil, then reduce to medium low. Simmer, uncovered, for 1 1/2 hrs.

    Set wings aside and let cool. May want to skin and save meat for another use.

    Strain contents of stockpot thru strainer into a 3 quart sauce pan. Press vegetables into strainer to extract more broth into saucepan. Discard vegetables & bring to gentle boil.

    In medium bowl, whisk flour into remaining 2 c chicken broth until smooth. Gradually whisk into turkey broth. Continue to simmer on low until thickens (3-4 minutes).

    Remove from heat. Stir in butter and pepper. Serve or prepare for freezer or refrigerate.
