Ingredients

  1. About 200 to 250g small sardines
  2. 1medium potato, diced
  3. 1small carrot, diced
  4. 1medium zucchini, diced
  5. 1/2 cuppeas, if available
  6. 1/2 cupgreen beans, diced
  7. 1large tomato, sliced and peeled
  8. 1large onion, thinly sliced
  9. Spices
  10. 2 tablespoonsvegetable oil
  11. Salt to taste
  12. 1/8 teaspoonblack pepper
  13. 1/2 teaspoonground ginger
  14. 1/2 teaspoonturmeric
  15. 1 teaspoonsweet paprika
  16. 2 clovesgarlic, grated
  17. 3 slicespreserved or regular lemon
  18. Green olives
  19. 2 tablespoonschopped cilantro

Cooking Instructions

30 minutes or until done

    Take a tagine and place some of the onion and a tablespoon of cilantro in it, reserving a little. Add half of the vegetables and a layer of sardines.

    Then add the remaining vegetables, another layer of sardines, and finally the remaining onion, tomato, cilantro, olives, and lemon.

    In a cup, mix the oil, spices, garlic, and 2 tablespoons of water. Stir well and pour the mixture over the vegetables. Cover and let it cook on low heat without adding more water, as the vegetables and fish will release enough moisture to cook.
