My sister always asks me to cook fish that doesn't taste like fish 😜. This recipe is quick and delicious! The secret is marinating the fish in lime juice and your seasoning of choice, in this case, achiote adobo paste.

Steps

15 min + 2 hours
  1. 1

Place the fish fillet in a container with a lid and add the lime juice. I use it straight from the freezer and let it come to room temperature. If you do this a day ahead, keep it in the refrigerator.

  2. 2

Dissolve the achiote adobo paste and add it to the fish. Let it marinate for at least 30 minutes, ideally 2 hours.

  3. 3

Cook the fish in a very hot skillet or griddle and break it into pieces. Add the marinade and pineapple, and cook until the liquid reduces. The more browned, the better the flavor.

  4. 4

Serve on warm tortillas with chopped cilantro and onion. If you like it spicy, don't forget the salsa.
