Ingredients

Serves 1 serving
  1. 1cleaned white fish fillet
  2. 1lime
  3. 2-2 1/2 teaspoonsachiote adobo paste (7-10 grams)
  4. 1/2 cuppineapple (about 75 grams)
  5. Cilantro, to taste
  6. Tortillas, to taste
  7. Onion, to taste
  8. Salt, to taste

    Place the fish fillet in a container with a lid and add the lime juice. I use it straight from the freezer and let it come to room temperature. If you do this a day ahead, keep it in the refrigerator.

    Dissolve the achiote adobo paste and add it to the fish. Let it marinate for at least 30 minutes, ideally 2 hours.

    Cook the fish in a very hot skillet or griddle and break it into pieces. Add the marinade and pineapple, and cook until the liquid reduces. The more browned, the better the flavor.

    Serve on warm tortillas with chopped cilantro and onion. If you like it spicy, don't forget the salsa.
