Spinach Pie - Börek (Turkish Food)

"Börek" is the generic name for Turkish pies.
There's various kinds of these pies, but this is the most popular.
In Turkey, they use flatbread, but in Japan, I make do with spring roll wrappers.
The baking dish should be about the size of the spring roll wrappers, but to keep the egg mixture from boiling over, it's best to use a rather tall dish.
Other than the spinach and cheese, you can also stuff this with fillings such as white cheese & parsley or ground meat & potato. Recipe by Jorogumo

Cooking Instructions

Cut the spinach into 1 cm pieces and finely chop the onions.

Heat some oil (not listed) in a pan and sauté the onions.

Add the spinach on top of the onions. Season with salt and pepper. Continue stir-frying until crumbly.

Mix the egg, milk, vegetable oil, salt, and pepper in a bowl.

Grease a baking dish with oil and line with a spring roll wrapper. Brush the top with the egg mixture using a brush. Repeat this step 3 times.

Shred up spring roll wrappers and top Step 5 with them. Coat well with the egg mixture. Repeat Steps 5 and 6 about 2 or 3 times.

Top Step 6 with the mixture from Step 3, then smooth the surface. Top with cheese.

Top with the remaining spring roll wrappers in the same manner as in Steps 5-6, then top the final layer with Step 4 egg mixture. Sprinkle sesame seeds on top.

Bake in an oven at 200℃ for about 20 minutes until the surface has browned.

I had some feta cheese that needed to be used up before it spoiled, and a container of yogurt that was close to its expiration date. I was planning to make our favorite cheese pie, and I had also bought spinach to make spanakopita. So I decided to combine the cheese pie recipe with spanakopita.
