DUDH Paneer is an extremely delicious curry which is fully a pure veg preparation and also a quick fix preparation. It is a no onion no garlic dish which goes well with paratha, Naan, kulcha, Pulao , Zeera rice, etc etc
Cooking Instructions

Cut paneer in cubes, marinade with salt and keep aside for 10 - 15 minutes.

Soak cashews and poppy seeds in hot water for 3-4 hours, slit green chilli and assemble all ingredients.

Make a paste of cashews, poppy seeds, ginger and green chilli by adding little water.

Heat pan, add 1 tbsp oil and fry paneer cubes till golden brown under low flame

Now soak the fried paneer cubes in 1 cup milk and keep aside for 10 - 15 minutes.

Now in pan add 1 tbsp oil + 1 tbsp ghee, add all the whole spices like bay leaf, cardamom, cinnamon, cloves and fry for 1 minute and then add the cashew paste and add little water so that cashew paste doesn’t burn. Stir fry under low flame till the paste fries well and also water evaporates.

Now add remaining milk, salt as required, also add the milk where paneer cubes are soaked. Add only milk at this stage and cook under low to medium flame for 2 - 3 minutes by stirring occasionally.

Now add garam masala, sugar, black pepper powder can also be added (optional), mix well and cook for 1-2 minutes.

Now add the paneer cubes, mix well and cook for 2-3 minutes or little more depending upon the preferred gravy consistency.

Lastly add raisins and slight ghee can be added for more better taste.

Keep in stand by for 1 - 2 minutes and it is ready to serve, garnish with raisins before serving.
