Pumpkin Gnocchi

Prepare the ingredients. Cut the pumpkin into cubes and microwave for about 7-8 minutes until tender.

Peel, wash, and cut the potatoes into chunks. Microwave for 5 minutes, or boil them using the traditional method if you prefer.

Mash both the pumpkin and potatoes with a fork or potato masher.

On a floured work surface, spread out the pumpkin, add the potatoes, and mix together with a fork. Add the egg, salt, and a pinch of nutmeg.

Add the flour and mix the dough as little as possible, shaping it into a log.

Let the dough rest for 10 minutes, covered with a kitchen towel.

After resting, dust your work surface with a little flour. Take a piece of dough, roll it into a rope, and cut it into small pieces about 3/4 inch (2 cm) long. Repeat until all the dough is used.

As you make the gnocchi, place them on a floured tray.

Your gnocchi are now ready to cook. Boil them in batches in salted boiling water, waiting for them to float to the surface.

As soon as they rise, remove them with a slotted spoon, drain well, and toss them with tomato sauce or your favorite sauce.
