I made hotchpot yesterday but had cut too much root veg. Now I am using them for a curry. Adding some cauliflower,tomato and chick peas.

I made hotchpot yesterday but had cut too much root veg. Now I am using them for a curry. Adding some cauliflower,tomato and chick peas.
Cooking Instructions

Heat the oil and let sweat the onion, garlic and ginger

Put in all spices and cook until the mustard seeds pop
- 3
Put in the root veg and the bouillon.

Put in the coconut milk and the tomatos
- 5
Cook for approx 20 min
- 6
Put in the cauliflower and cook for another 10 min. You want the cauliflower to have some bite
- 7
Put in the chick peas and herbs. Put out the fire and let it stand for 5 min.

Serve with plain rice, naan bread or roti

I adapted a curry recipe from "vege dining", a website I love.It is free of animal derived ingredients and doesn't use a lot of oil, so it's ideal to feed to small children as well.Add richness using sesame paste. You could probably use peanut butter instead. Adjust the amount of spices to taste. Reduce the curry powder for small children. Try to use preservative and MSG-free ketchup and sauce as much as possible.
