I made hotchpot yesterday but had cut too much root veg. Now I am using them for a curry. Adding some cauliflower,tomato and chick peas.

I made hotchpot yesterday but had cut too much root veg. Now I am using them for a curry. Adding some cauliflower,tomato and chick peas.

Ingredients

  1. 400 grcut root veg
  2. 200 grcauliflower roses
  3. 3rougly diced tomato
  4. 1/2white onion diced
  5. 200 grcooked chickpeas
  6. 500 mlstock fresh or cube
  7. 250 mlcoconut milk
  8. 1 tbgarlic paste,ginger paste
  9. 1/2 tbBlack mustard seed,and yellow mustard seed
  10. 1/2 tbturmeric,fennelseeds, coriander,cumin
  11. 2chrushed cardemon pods
  12. A fewchiliflakes (this a mild fragant curry)
  13. Coriander or parsley finely chopped for garnish
  14. Some salt if you like

Cooking Instructions

    Heat the oil and let sweat the onion, garlic and ginger

  2. 2

    Put in all spices and cook until the mustard seeds pop

  3. 3

    Put in the root veg and the bouillon.

  4. 4

    Put in the coconut milk and the tomatos

  5. 5

    Cook for approx 20 min

  6. 6

    Put in the cauliflower and cook for another 10 min. You want the cauliflower to have some bite

  7. 7

    Put in the chick peas and herbs. Put out the fire and let it stand for 5 min.

  8. 8

    Serve with plain rice, naan bread or roti
