Peel and slice the potatoes into thin rounds (do not wash the potato slices, as the starch helps achieve the right consistency).

In a pot, combine the milk and cream. Add the garlic and onion, then season with salt and pepper. Add a pinch of nutmeg. Add the potato slices without washing them.

Bring to a boil and cook for 30 minutes.

Pour everything into a buttered baking dish. Add the Gruyère cheese and pieces of butter on top.

Bake at 480°F (250°C) for 10 minutes.
