  1. 1carrot
  2. 1/2onion
  3. 1celery stalk
  4. 3 sprigsfresh parsley
  5. 2medium potatoes
  6. 1 1/3 cupscanned cannellini beans (about 250 grams)
  7. 1/4 cuptomato purée (about 1/2 cup or 120 ml)
  8. 1 tablespoonvegetable bouillon (about 15 grams)
  9. 6 cupsfresh spinach (about 600 grams)
  10. 7 cupssavoy cabbage (about 700 grams)
  11. 7 cupsSwiss chard (about 700 grams)
  12. 3 1/2 cupslacinato kale (about 100 grams)
  13. 3zucchini

Steps

About 2 hours and 40 minutes
  1. 1

    Chop the carrot, onion, celery, and parsley into small pieces and place them in a large pot with a drizzle of olive oil. Sauté for about 5 minutes, until the onion softens.

    Add the diced potatoes and cannellini beans. Cook for another 5 minutes.

    Pour in the tomato purée and add the vegetable bouillon. Cook for 10 minutes.

    Meanwhile, wash and chop all the greens and the zucchini.

    After the cooking time, add the greens and zucchini to the pot and cook for about 2 hours, until the vegetables are tender.
