Chop the carrot, onion, celery, and parsley into small pieces and place them in a large pot with a drizzle of olive oil. Sauté for about 5 minutes, until the onion softens.

Add the diced potatoes and cannellini beans. Cook for another 5 minutes.

Pour in the tomato purée and add the vegetable bouillon. Cook for 10 minutes.

Meanwhile, wash and chop all the greens and the zucchini.

After the cooking time, add the greens and zucchini to the pot and cook for about 2 hours, until the vegetables are tender.
