A hearty soup with a few surprises. Not only does it has black beans it also has four types of peppers. With all this spice you have to have some type of sweetness. Boom sweet potatoes baby. Let's get ready for some chili.
Cooking Instructions
- 1
Start to dice your aromatics: onion, garlic, peppers and. Tomatoes. Add them 1 at a time to give the ingredients time to develop flavor. Cooking soup is all about a slow dance. Have to let each ingredient dance together for at least a minute.
- 2
While the aromatics are dancing, start to dice the tomatoes. You should do a medium dice. Add them to the party and let simmer for 20 minutes. Let them cook down and develop flavor.
- 3
While there is a club going in your pot. Start to dice the sweet potatoes. I prefer skin on because why not ? Cut the potatoes in half and half again. Cut across the potatoes and slowly add them to the party. Add the 2 cups of water and let simmer for 15 minutes
- 4
Once the potatoes are tender add your spices. I went light with the measurements and type of spice with this recipe. I wanted to bring the peppers and bean flavor forward. Add the beans and your corn. It should only take 10 minutes to get the beans hot.
- 5
Grab your bowl and your favorite chili toppings. I added cilantro and parsley. Now let's sink right into a cozy bowl of chili 😋

We only get a few chili weather days in Southern California, so we are taking advantage of them! (Chili weather being temps in the 60s - don't laugh, Rest of the Country Except Florida. It's all about acclimation. :P )I used Kidney for texture, Pinto for earthy flavor, and Cannellini for creaminess this time, but use whatever beans you like.If you don't care for ground beef, you can sub with ground turkey, chicken, or pork. x -
