White Bean Turkey Chili

This is a variation on standard chili recipes that is light in color, rich with chili flavor, and yes, healthier. Recipe is especially useful for leftover turkey meat from Thanksgiving!
Note: I don’t normally use package mixes when cooking, but this is an exception. #chili

Cooking Instructions
- 1
In a large pot, sauté the bell pepper in olive oil. Then add the onions and the jalapeno pepper and cook until all ingredients are soft and onions are translucent.
- 2
Remove the sautéed vegetables from the pot, set aside, and add some olive oil. Add the ground turkey and cook over medium heat until lightly browned. Drain off any fat.
- 3
Add the garlic, the McCormick mix, and flour to the turkey. Mix and heat for 2 minutes. Add 2 cups of stock and heat to a light boil.
- 4
While heating, add the mushrooms, tomatoes, and white beans. Add back in the peppers and onions.
- 5
When the mixture begins to slightly boil, reduce the heat to low and cover. Cook for 10-15 minutes. While cooking, add the green onions and the cilantro. Adjust for taste with seasonings.
- 6
Add in chunks of leftover turkey meat and heat through. Add additional stock if needed.
- 7
Looks like thick / chunky chili.
- 8
Tip: I like to mound chili on top of cooked pasta shells in a bowl. Top with cheese and heat in a microwave for 40 seconds.

I am not a huge chili fan, but I LOVE this chili. It is more like a soup and not too chunky...and it has a kick to it! Kristy -

This is another great recipe from Cook’s Illustrated. Be sure to use 93 percent lean ground turkey, not 99 percent fat-free ground turkey breast, in this recipe. Corn tortillas add flavor and help thicken the chili. Ricardo -

My hubby came up with this recipe for my son who doesn't care for chunks of tomato, onions and bell peppers in chili. The result is pleasantly surprising and satisfying! Took me a while pin down the measurements, because "some people" just cook from the hip...lol. U kno who u r!! (Added missing ingredients Dec 5 2104) Uninstalled -
