Toor Dal Fry

Wash, rinse the tur dal 2-3 times with water and soak the dal in enough water for at least 30 minutes. Then drain the water. Put the washed dal in a heavy bottom pot. Add 3 cups water and bring it to a boil.

Then slow down the heat and cook the dal till it becomes soft and fluffy. Add hot water if needed. When the dal is cooked properly, turn off the heat and set aside.

Heat oil over medium heat in a pan or heavy bottom pan. Add mustard seeds, cumin seeds and red chilli.

When mustard seeds splutter, then add curry leaves, onion, green chillies and saute till onion turn translucent. Add ginger-garlic paste and saute for one minute.

Add tomato, turmeric powder, hing, coriander powder, red chili powder, garam masala. Mix well and keep stirring until the tomatoes are soft and mushy.

Next add the cooked dal. Add more water (¼ or ½ cup) if needed. Mix well. Add salt and boil till dal reaches the desired consistency. Cook for about 3 to 5 minutes. Then switch off the gas.

Garnish with chopped coriander leaves. Toor dal fry is already.

Serve it with rice and roti
