Preheat the oven to 375 F

Heat the olive oil in a large pan over medium-low heat and cook the onion and bell pepper until very soft, about 20 minutes.

Add garlic and cook until tender, 1-2 minutes. Stir in spices and cook 1 minute. Add the tomatoes and liquid, season with salt and pepper.

Simmer until tomatoes have thickened, about 10 minutes. Add the greens. Stir in the feta

Make 6 indentations in the tomato mixture with the back of a spoon. Gently crack the eggs into the pan, over the tomatoes

Increase the heat so the sauce is simmering about 10 minutes. Baste the egg whites with the sauce from time to time. Cover and cook 3-5 minutes until the eggs are set, but the yolks are still soft

Sprinkle with chopped cilantro. Serve with crusty bread and hot sauce
