Ingredients

  1. 1 cupflour
  2. 1 cupcorn meal
  3. 1 cupsugar
  4. 1/4 tspsalt
  5. 4 tspbaking powder
  6. 1-15 ozcan of creamed corn
  7. 1small can diced green chilies
  8. 1 cupbutter
  9. 1/2 cupcheddar cheese
  10. 1/2 cupmonterrey jack cheese
  11. 4eggs

Cooking Instructions

    Coat top and sides of skillet with canola/vegetable oil

  2. 2

    Preheat Oven and the skillet to 325 degrees

  3. 3

    Mix all the wet ingredients together (corn, chilies, eggs, cheese, and melted butter) and dry ingredients in separate bowls, then mix them together at the end in big mixing bowl.

    Pour in pre-heated skillet and cook for approx 25-40 min (last time I cooked at home, 30 minutes was perfect)

    All ingredients go into one large cast iron pan. Double ingredients and use 2 pans for large groups.
