This version of Korean beef kabobs (beef sticks) is for a serving plate of appetizers for group gatherings or parties. Adjust the amount of gochujang (Korean sauce / paste) to your liking or taste.

This version of Korean beef kabobs (beef sticks) is for a serving plate of appetizers for group gatherings or parties. Adjust the amount of gochujang (Korean sauce / paste) to your liking or taste.
Cooking Instructions

For the marinade:
In a small bowl whisk together all the marinade ingredients until well blended and set aside. - 2
Place beef in freezer for 30 minutes for easier thin slicing. Slice the beef 1/4” thin.

Place in a zip-lock bag. Add the marinade to the bag and squeeze out the air before sealing. Place in the refrigerator for 6-8 hours.

For best results, prepare the dipping sauce at this time and refrigerate.

After marinating, place the beef in a bowl and drain off the liquid. Over a plate (drips), thread onto skewers like a ribbon.

Heat a well-oiled grill and sear for 2 minutes (max) each side. *Keep stick ends away from heat for easier turning.

Plate the appetizers and top with “toasted” sesame seeds, green onions, and cilantro. Add to the plate the small bowl of dipping sauce and enjoy.

But the base of the marinade is fairly similar.I like to use thigh meat because the texture, flavor and fat content holds up better to the marinade than breast meat. This recipe is specifically for kabobs, but you could certainly use whole pieces of boneless thigh meat or even the entire thigh if you like, and cooking times will of course increase accordingly.Generally speaking, I'm not a big fan of overnight marinating. There are very few proteins that won't get a cured texture under the saltiness of most marinades if left to sit in them too long, though fattier cuts do hold up better. The marinating point of diminishing returns is even earlier on meat that's cut kebab-size (1" to 1.5" cubes). Ideally, I would let this marinate for an hour or two at most. It won't be awful if you go longer, but the meat will begin to feel, well, hammy. x -
