  1. piecesEel, cut into
  2. Seasonings, to taste
  3. Southern Thai red curry paste (dried chilies, garlic, shallots, lemongrass, fingerroot, black pepper), to taste
  4. Shrimp paste, to taste
  5. Coconut cream, to taste
  6. Kaffir lime leaves, thinly sliced

    Wash the eel pieces thoroughly.

    Toast the eel pieces in a pan with garlic until just cooked to remove any fishy smell. Set aside.

    In a pot, bring the coconut cream to a boil. Add the curry paste and shrimp paste, stirring until the paste dissolves and the mixture boils.

    Add the cooked eel pieces to the boiling curry. Season to taste with a slightly sweet and salty flavor. Add the sliced kaffir lime leaves, turn off the heat, and remove from the stove.
