Southern Thai Spicy Eel Curry (Gaeng Phed Pla Lai)

Wash the eel pieces thoroughly.

Toast the eel pieces in a pan with garlic until just cooked to remove any fishy smell. Set aside.

In a pot, bring the coconut cream to a boil. Add the curry paste and shrimp paste, stirring until the paste dissolves and the mixture boils.

Add the cooked eel pieces to the boiling curry. Season to taste with a slightly sweet and salty flavor. Add the sliced kaffir lime leaves, turn off the heat, and remove from the stove.
