We make the fresh podi/powder for this curry which makes it more delicious

Hello friends,
Today I am sharing a tasty, and zesty dry curry to pep your meal – here comes the brinjal/ baingan / Indian eggplant dry curry recipe with freshly ground spices.
We make the fresh podi/powder for this curry which makes it more delicious
Steps

Heat oil in a pan. Add urad dal, chana dal, peppercorns, cumin, fennel seeds, coriander seeds, dry red chilli, curry leaves, peanuts, small onions & coconut in low flame. Grind to a coarse powder. Keep aside.

Add tomatoes. Saute till it becomes mushy. Add brinjal with some salt & turmeric powder. Mix well for 2 minutes. Add a splash of water. Close & cook for 5-10 minutes

Once cooked, add the ground masala powder. Mix well and close & cook for 3 minutes so that the masala binds well. Finally garnish with some coriander leaves and serve hot.

You can serve this spicy brinjal dry masala along with rice, sambar, rasam or any kuzhambu varieties.

Notes
~ Eggplants shouldn't be completely mushy, we should be able to see their long shape but they should be tender.
~ Keep eggplant slices in water to prevent blackening.
