These enchiladas are made in my grandfather's hometown and they're delicious.
Cooking Instructions

Boil the chilaca peppers, garlic, onion, tomatoes, potatoes, and carrots.

After 15 minutes, remove the peppers, tomatoes, onion, and garlic. Blend them together and add salt to taste.

When the potatoes and carrots are tender, remove them from the water and dice them into small cubes.

Chop the lettuce and wash thoroughly.

In a skillet with plenty of oil, dip each tortilla in the chili sauce and fry. (Homemade tortillas work best for this step.)

When the tortilla is lightly golden, fill it with cheese. Sauté the potatoes and carrots in the remaining chili sauce.

Top with carrots, potatoes, more grated cheese, lettuce, and sour cream.
