Palak Rice

My zodiac is LEO ….. so green leafy vegetables
PALAK RICE paired with curd.
Steps

Blanch spinach, then blend into a smooth paste by adding ginger + garlic + green chilli + little water.

In pan add 2-3 tbsp oil, add cumin, bay leaf, dry red chilli, let them splutter for few seconds, then add garlic and sauté till light golden brown.

Then add chopped onion and sauté till onion turns slight pinkish and brown, then add spinach paste + slight water and cook for 2-3 minutes till the rawness of leaves goes off.

Then add all spices along with salt and sauté till spices leaves oil and turns aromatic.

Now add cooked rice, mixed gently, add sugar + salt (if required) + lemon juice, mix well and simmer for 2-3 minutes. Keep in stand by mode for another 2-3 minutes

Now Palak Rice is ready to serve. Serve with Raita or plain curd.
