Greek beef stew in tomato sauce - kokkinisto

This is one of the most traditional Greek recipes.
We cook a lot of things in tomato sauce and call them "kokkinisto" which roughly means "reddened". One of the most common ones is this beef recipe.
It requires a lot of time (in order for the beef to become extra tender), and this is why most of the times I make it either in a pressure cooker or a slow cooker.
You can use your choice of beef cut. I prefer leaner parts, but use what you usually do for stews.
We serve it with pasta, rice or fries.

Pour the oil in a pot and heat it. Add the beef cubes and brown them on all sides.

Add the chopped onions, carrots and garlic and saute for 3 minutes. Pour in the wine and stir everything. Let it simmer for 5 minutes.

Add the tomato sauce (the passata), salt and pepper, the pinch of sugar, the bay leaf, cinnamon and cloves. Stir everything and add water, so that you cover maybe 2/3 of the meat. Let it boil and then turn the heat a bit down.

The meat has to simmer. Don't put it on high heat. It needs its time. It will take about 1 1/2 hours. It will be done when the beef is so tender you can easily cut it with a fork. In the meantime, if you see that the sauce is not enough/ is very thick, just add some water. If in the end you see that the sauce if very watery, remove the meat and turn up the heat so that it boils and thickens.

The best thing to serve it with is pasta (in my opinion). Boil some spaggeti, drain, and put in plates. Add some beef and plenty of tomato sauce on top and sprinkle with grated parmezan (if you were in Greece you would use Mizithra).
