Roughly chop beetroot, boil in 1/2 cup water by adding little salt + sugar and boil for 4-5 minutes till water evaporates to some extent and beetroot turns soft.
Let it cool and grind into a smooth paste and keep aside. - 2
Assemble all other ingredients

In pan add 2-3 tbsp oil / ghee, put all whole spices and let them crackle for around 1 minute, then add finely chopped ginger garlic and sauté for few seconds till it turns light golden brown.

Then add chopped onion + 1 slit green chilli and sauté till onion turns light golden brown.

Now add chopped tomatoes + green chilli and sauté for 1-2 minutes, add beetroot paste and mix well.

Now add cumin powder + coriander powder + turmeric + red chilli powder + salt and stir fry till masala leaves oil and turns aromatic.

Add cooked rice and mix gently. Then add boiled green peas and mix well.

Gently mix all very nicely and add lemon juice and simmer under medium flame for 3-4 minutes.

Keep in stand by mode for 2-3 minutes and beetroot root rice is ready to serve.

Garnish with green peas + onion rings and Serve with plain curd, raita or beetroot raita.
