Ingredients

  • 24cooked turkey meatballs
  • 123 gChopped Baby Spinach
  • 8 CupsChicken Stock
  • 8 ozOrzo Pasta
  • 3 ClovesMinced Garlic
  • 330 gSweet Onion
  • 250 gDiced Celery Sticks
  • 180 gDiced Carrots
  • 1 TspCalabrian Chili Oil
  • 1 TbspLightly Dried Basil
  • 1 TbspLightly Dried Parsley
  • 2 SprigsPlucked Oregano Leaves

Steps

    Wash and chop all vegetables

  2. 2

    Heat 1Tbsp Olive Oil in Dutch oven

  3. 3

    Add Onion, Carrot, Celery & Garlic to pot and cook on Med/High for 5 min or until onions become translucent

  4. 4

    Add chicken stock to pot, cover and bring to boil.

  5. 5

    Add Orzo, Basil, Oregano, Parsley, Salt & Pepper

  6. 6

    Pour one tsp of oil from jar of Calabrian Chili's into pot and cover. Cook 8-10 min stirring occasionally until Orzo is tender.

  7. 7

    Lower heat and add meatballs and spinach to pot. Simmer 10 minutes or until meatballs are heated through and spinach is wilted.
