I had started to make stew before I realised I didn't have any stew stock cubes. I panicked a little and came up with this.
There isn't much to it, but it's healthy and my husband loved it ♪

Season with salt and pepper if you like.
The thick texture of the potato is very important, so boil it until soft. Soy milk is sweet, so you don't need to add onions. Recipe by Fuwafuwanoeru

Ingredients

2 servings
  • 1Potato (large)
  • 1/2Carrot (small)
  • 1Broccoli
  • 400 mlWater
  • 4Wiener sausages
  • 2 1/2 cupSoy milk
  • 1Soup stock cube
  • 1 dashSalt and pepper (optional)

Steps

  1. 1

    Peel the potato and slice into easy to eat pieces. If you are short of time, you can microwave it (3 minutes at 600 W).

  2. 2

    Peel the carrot and slice into easy to eat pieces. Break the broccoli into florets and boil.

  3. 3

    Pour water into a saucepan and boil the potatoes and carrots. Keep an eye on it and add more water if necessary.

  4. 4

    When the potato has softened enough to crumble, add the soup stock cube.

  5. 5

    Turn off the heat, and add in the soy milk. Make cuts in the surface of the sausages, add them and mix.

  6. 6

    Turn the heat on, and mix with a ladle to mash the potatoes over low heat.

  7. 7

    Add the broccoli, mix again, pour into serving bowls, and it's done.
