Ingredients

  • Marinade
  • 1 tbspolive oil
  • 1 tspCayenne chilli pepper
  • 1/4 tspsalt
  • 1/2freshly squeezed lemon juice
  • 1whole chicken (I'm using a 2 kg sized chicken)
  • 4garlic cloves
  • 1 1/2 tbsppimento paste or chicken marinade paste
  • Basting Sauce
  • 50 mlolive oil
  • 1/2freshly squeezed lemon juice
  • 1 tspPiri-piri sauce (hot sauce)
  • 1bay leaf cut into pieces
  • 1/4 tspblack pepper
  • 1/4 tspsalt
  • 1 tspchilli flakes
  • 1 tbspchicken marinade
  • 2garlic cloves
  • 3 tbspbutter

Steps

  1. 1

    Add all the marinade ingredients to a food processor. Turn it into a fine paste.

    You can either open the chicken in half or leave it whole. Marinade the chicken with the paste and leave in fridge for at least 2 hours.

    Next prepare the marinade. Place all the ingredients (not the butter) either in a blender or food processor. Place in fridge until needed.

    Melt the butter in microwave on 30 second intervals before using the baste and add to the sauce.

  5. 5

    Place chicken on the spit roast on a pre heated barbecue.

    Barbecue for about hour and half to two hours.

    Keep basting with the sauce occasionally.

    Once its cooked let it rest for 10 minutes and cut into pieces.

    Serve with salad and chips.
