Bajra Methi Thepla with Potato bhaji

For thepla, first of all wash & cut fresh fenugreek leaves.

In a large bowl, take both the flours and add fenugreek leaves & rest of the ingredients and knead the thepla dough by adding water gradually. Apply some oil on the dough & cover it for 10 to 15 mins.

Divide dough into equal portions, flatten and roll out dusting with flour.Heat a non-stick tawa and roast the prepared theplas using oil/ghee, till golden from both sides. Thepla are ready to serve. Apply some ghee while serving.

For Potato bhaji, boil the potatoes & then peel off & cut it into cubes.

In a kadhai, add oil & mustard seeds, saute it. Then add green chillies & curry leaves. Then add all the dry spices & sesame seeds & mix it well.

Then add potatoes, salt, lemon juice & sugar and mix all well. Cover the lid & let it cook for 5 mins. Lastly sprinkle some coriander leaves.

Serve the delicious bajra methi thepla & potato bhaji in lunchbox.
Curd & green chillies pickle goes well with this combo.
