Crepes are basically the french version of pancakes. It's a thin flat bread. They are of both sweet and savoury type. The sweeter version is topped with fresh seasonal fruits and nutella or maple syrup or a chocholate dip or can be served as it is. Very easy to make and a healthy breakfast idea or can be given in kids lunch box.

In a deep bowl seive the flour now add all the dry ingredients and mix well. Now add the eggs and whisk it very well until all mixed up. Now add the butter and vanilla essence and whisk again.

Then add the milk gradually and whisking it continuously to make a smooth lump free batter. It should be of a running consistency just like the dosa batter. Rest the batter for 10 minutes.

On a hot griddle or pan grease some oil and spread half a cup of batter moving your pan/griddle in a round motion or spread it just like a dosa. Cook it for 2 minutes on one side then flip it to the other side and again cook for a minute.

Transfer it to the plate and like so make all the crepes. You can easily make 7-8 crepes in this batter. Serve hot with a drizzle of some maple syrup or a topping of nutella with some fresh fruits.

IMPORTANT
You can use half and half of all-purpose flour and wheat flour.
Like so you can use half and half of milk and water.
You can totally skip the sugar or use less or more up to you.
For the egg substitute you can use half mashed banana for one egg or 4 tbsp of yoghurt or 4 tbsp of buttermilk. - 6
