  1. 1/2red cabbage
  2. 2carrots
  3. 1small fennel
  4. 2 handfulskale
  5. 1/2Lemon (juiced)
  6. 2 tbspGreek yogurt
  7. Pinchsmoked paprika
  8. Pinched chilli flakes
  9. Dashbalsamic vinegar
  10. Salt and pepper

  1. 1

    Grate the carrots, red cabbage and fennel.

    I use a grater for carrots, but a processor for the cabbage and fennel - it’s easier and adds some interesting texture

    Finely chop the kale (remove any stalks)

    Mix all the ingredients together and season to taste

    Serve with slow cooked pork or any bbq recipe
