Steps

Take a Bharta baingan/brinjal..a big one.. wash &apply oil to it

Now place a rack over the flame and cook the baingan/brinjal on all sides equally. Let the outer skin burn properly and turn it in equal intervals to avoid it from excess burning.

Let it cool for a while and remove the skin of the baingan/brinjal and with the help of fork mash it properly.

Now heat up mustard oil in a, pan add cumin and mustard seeds, let it splutter, add ginger garlic paste&green chillies and saute it well.. then add onions to it

Add salt to the onion. It helps in faster cooking of onion. And saute well. Also, add a pinch of hing.

Now add in coriander powder, red chilli powder, turmeric powder and garam masala to it. Mix well and then add tomatoes to it.

Now cover and cook the tomatoes for about 4-5 minutes. It may take more time in some cases.when tomatoes are cooked Add in mashed baingan and mix well

Cover and cook for about 4 to 5 minutes again so as to cook it properly. Then garnish with coriander leaves.and your delicious Baingan ka Bharta is ready to be enjoyed..
