Who doesn't like chocolate cookies?! And Romany Cream?!
My mom wrote done this recipe from one of the magazines in the dentist’s waiting area on my visit to the dentist when I was in primary school. After that we tweaked the recipe a little and baked this cookies almost every year.

Preheat the oven to 180'C.

Beat the butter and sugar until creamy with an electric mixer.

Add the flour, cocoa, baking powder and salt in a large bowl and stir until combined.

Add a bit of the flour mixture into the butter and mix, add a bit of water and mix. Continue until all flour and water added. Work the dough together to form a soft ball.

Prepare a tray with cooking spray and baking paper.

Roll desert spoon balls and place on the baking paper tray. Press down with a fork.

Bake for 8-10 minutes. Do not over baked!

Transfer to wire racks to cool completely. I made the batch twice, one batch per container.

Melt the chocolate in a double boiler and allow to cool for 5 minutes. Spread the chocolate over the undersides of half of a cookie and top with another cookie. Continue with all cookies.

Store the cookies without the chocolate in a sealed container. Only add the chocolate layer once ready or want to eat. The cookies become soft after about a week with chocolate layer in between, but still yummy!
