Red Chili Salt for Seafood: Prepare all ingredients and make sure they are clean. Remove the stems from the chili peppers. Squeeze the limes and strain out the seeds.
Add the red chili peppers (I use this type because it’s less spicy), salt, sugar, sweetened condensed milk, MSG (if using), and lime juice to a blender. Blend until completely smooth.

If you don’t want too much sweetened condensed milk, you can replace half of it with sugar. This sauce is quick and easy to make, and it’s perfect for dipping seafood, chicken, salads, or marinating meat.

Sweet and Sour Fish Sauce: The usual ratio is 1:1:2:4—1 part fish sauce, 1 part vinegar, 2 parts sugar, 4 parts water. Adjust to taste and depending on the saltiness of your fish sauce. Use this ratio as a base and tweak it to your liking.

Add water, fish sauce, sugar, and vinegar to a pot. Bring to a boil and stir until the sugar dissolves, then let cool. If you want to use lime juice instead of vinegar, only add the lime juice right before serving, not while cooking. When ready to use, pour the sauce into a bowl. Add minced or finely chopped garlic and chili peppers, stir well, and serve. This sauce is great for dipping spring rolls, egg rolls, pouring over noodles, or serving with steamed or fried cakes.
