Quick pickle your vegetables. Combine hot water, salt, vinegar, and then add sliced cucumbers, carrots, and jalapeños. Let sit for however long you want (at least 20 mins)

Make jasmine rice according to instructions on package

Heat EVOO over medium high heat. Add ground beef. Cook until browned and then pour out as much fat juice as you can

Add garlic into the center of the ground beef cooking. Cook 3 min

Add shiitake mushrooms to ground beef pan. Put lid on pan and cook 5-10 mins until mushrooms are soft

Add spinach and cook until wilted

Make creamy gochujang sauce by combining yogurt, gochuchang, and lime juice

Plate by putting rice on bottom, base on top, top with kimchi, pickled vegetables, and creamy sauce
