Cut off the tops of yellow peppers and scoop out seeds and membranes. This will leave you with a fancy bell pepper cup

Microwave the bell pepper cups on high for 5 minutes

Mix rice into ground beef. Add cheese and leave enough cheese for topping

Stuff peppers with the beef and rice mixture

Place in a baking dish, cover with foil and bake for 20 minutes. At the 15 minute mark remove the foil and top the peppers with the reserved cheese. Bake for the remaining 5 minutes or until the topped cheese sizzles and slightly turns golden

Serve with pasta and roasted vegetables. Enjoy!
