Lettuce and Mushroom Rice Flour Crepes Lettuce and Mushroom Rice Flour Crepes
I have some bright green lettuce that is in season and is just the right size.I thought up a slightly unique salad-like recipe that captures the lettuce's crisp texture and taste.Place a sheet of parchment paper between the cooked crepes when stacking them, and they won't stick together.Instead of shimeji mushrooms, you can use shiitake mushrooms, oyster mushrooms, or any other mushrooms you like. They are good eaten as-is,like a salad, but you can put sauce or ketchup on them, if you wish. Deli-Style Lettuce and Tomato Salad Deli-Style Lettuce and Tomato Salad
I bought some tomatoes on sale, but they weren't that good as-is. So I chopped them up finely, marinated them in olive oil and turned them into a dressing.A generous amount of oil is key to a deli-style salad.Mix the tomato and lettuce together well just before serving. (The lettuce should wilt and soften a bit.) Don't just pour the dressing over it. Try to mix everything up with your hands.Use Krazy Salt for more flavor. I recommend using extra virgin olive oil too. For 4 servings. Recipe by moj cookpad.japan
