Lettuce and Mushroom Rice Flour Crepes

I have some bright green lettuce that is in season and is just the right size.I thought up a slightly unique salad-like recipe that captures the lettuce's crisp texture and taste.

Place a sheet of parchment paper between the cooked crepes when stacking them, and they won't stick together.
Instead of shimeji mushrooms, you can use shiitake mushrooms, oyster mushrooms, or any other mushrooms you like.
They are good eaten as-is,like a salad, but you can put sauce or ketchup on them, if you wish. Recipe by caramel-cookie

Ingredients

10 servings
  1. 4 largeleaves Lettuce
  2. 2bunches Shimeji mushrooms
  3. 5 sliceSliced ham
  4. 1 tbspButter
  5. 1Salt and pepper
  6. Rice Flour Crepes
  7. 100 gramsRice flour
  8. 2Eggs
  9. 200 mlMilk
  10. 2 tbspVegetable oil
  11. 2 tspSugar
  12. 1 pinchSalt
  13. 1Vegetable oil

Steps

  1. 1

    Make the rice flour crepes. Beat the eggs,add the vegetable oil and milk, and mix well. Add the sugar, salt and rice flour and mix until smooth.

    Heat up a frying pan and coat lightly with vegetable oil. Spread a scant ladle full of batter in the pan to make a circle. When the top is dry, turn it over and lightly cook the other side. Do the same for the rest of the batter.

    Soak the lettuce in cold water for about 5 minutes, drain well and tear into easy-to-eat pieces.

    Cut the ham slices in half.

    Heat butter in a frying pan and cook the mushrooms for 2~3 minutes over high heat. Sprinkle with salt and pepper. Remove from the heat.

    Put a leaf of lettuce on a crepe, and lay the ham and the mushrooms on top,a bit above the middle.

    Roll up the crepe. Do the same for the rest of the ingredients.

    Transfer to a serving dish.
