Ingredients

  1. 1 cupBasmati
  2. 1 tablespoonbutter
  3. 1 tablespoonvegetable oil
  4. Chopped veggies
  5. 4medium sized Tomatoes
  6. Medium sized onions chopped
  7. 4 clovesgarlic chopped
  8. Spices/ salt

Steps

  1. 1

    Soak basmati and keep aside for about 30 minutes
    Blanche tomatoes (boil and peel off skin) and make into purée

  2. 2

    Put pot on heat, add vegetable oil and butter and allow to melt. Sauté onion and garlic till caramelised

    Add spices, salt and stir for a while
    Wash and drain basmati and add into the mixture to release Flavours. Toast on medium heat for about 2 minutes. Stir gently to avoid breaking rice grains

    Add in veggies and tomato puree and stir gently. Add a cup of water or stock and adjust seasoning. Cover with foil and cook on medium heat for about 10-15 minutes.

    Turn off heat and serve
