Steps

Soak basmati and keep aside for about 30 minutes
Blanche tomatoes (boil and peel off skin) and make into purée - 2
Put pot on heat, add vegetable oil and butter and allow to melt. Sauté onion and garlic till caramelised

Add spices, salt and stir for a while
Wash and drain basmati and add into the mixture to release Flavours. Toast on medium heat for about 2 minutes. Stir gently to avoid breaking rice grains - 4
Add in veggies and tomato puree and stir gently. Add a cup of water or stock and adjust seasoning. Cover with foil and cook on medium heat for about 10-15 minutes.

Turn off heat and serve
