Steps
- 1
In a pan with olive oil, cook pressed garlic for about minute. Then add spinach, salt and pepper and cook for few minutes. Once cooked, let it cool for about 10 minutes.
- 2
Meanwhile cut the ends of zucchini and peel it with peeler to make thin strips.
- 3
Add ricotta cheese into spinach and mix well. Taste and if needed, add salt, pepper or some dried herbs.
- 4
Place 2 and 2 zucchini strips on the plate (in a shape of a cross), add spinach ricotta mixture and fold.
- 5
Pour marinara on the bottom of glass baking pan, add folded zucchini ravioli upside down and top it with grated mozzarella.
- 6
Bake in a preheat oven at 180°C for 15-20 minutes. Serve and enjoy 😋
