When peas or matar is in season, make most of it and what better way than to make Kheer which is my favourite
Steps

Peel the peas, add 5 cups water and peas, adding salt, baking soda and sugar and bring it to boil on high heat for 2 mins and then medium heat until softened

Drain and add to ice water to retain the green colour and preventing further cooking. Cool and drain and add to a blender.

Add 2 Tbsp milk and blend to a smooth purée, set aside

In a wok heat ghee and add separately cashew nuts, raisins and chironji and fry, set aside

In the same wok add milk and on medium heat bring it to boil, add peas purée and keep stirring for 5 mins. Add saffron and stir. Add fried raisins, cashew nuts and chironji. Add sugar and stir well.

Soak Pohe and drain. Add that to the peas mix. Stir on medium flame until thickened

Set aside to cool

Plate and garnish with rose petals and dry fruits - enjoy!
