With 7°C, here in Kathmandu, I decided to go for a hot and creamy Beet and Tomato Creamy Soup, to combat the cold. It's a simple recipe as we know. The taste is awesome and giving a satisfaction and relief from cold to some extent
Steps

Wash beet and tomatoes. Peel and chop veggies, onion and garlic.

Pressure cook the chopped veggies and 2 cups of water for 2-3 whistles.

Blend the veggies to smooth when they are warm.

Heat Olive oil in a pan. Add cumin powder, hing and salt. Stir for few seconds.

Add veggies puree and simmer the soup for 2-3 minutes, stirring. Keep the soup as you like, thick or thin.

Garnish with black pepper powder, cream and green coriander leaves. Njoy.
