And if you don't have fresh figs, try this recipe with dried figs or your favourite fruit!

Ingredients

  1. Dry Ingredients:
  2. 3 cupsoats
  3. 1 teaspoonbaking powder
  4. 1 teaspooncinnamon
  5. 1/4 teaspoonnutmeg
  6. pinchsalt
  7. Wet Ingredients:
  8. 1 1/2 cupsmilk
  9. 2eggs
  10. 3 tablespoonsapricot jam (or honey)
  11. Toppings:
  12. 6fresh figs
  13. 1 tablespoonhoney

    Preheat the oven to 180'C.

    Spray a muffin pan with nonstick spray and line with muffin paper cups. The muffin paper cups are optional, if not using paper cups spray generously with nonstick spray.

    Mix the dry ingredients in a large bowl.

    In a separate small bowl, whisk the wet ingredients together.

  5. 5

    Spoon the wet ingredients in the dry ingredients and mixed together. Ensure all the oats are covered and wet.

    Spoon the mixture into the muffin cups, making sure the oats and liquid are in each.

    Clean the figs, cut of the stems and cut in half.

    I used Purple Parisian Figs, but any fresh figs will work. Or try it with your favourite fruit!

    Make a hole in each muffin with the back of a tablespoon or scoop.

    Place one half fig in each muffin cup and drizzle with honey.

  11. 11

    Bake for 30-35 minutes or until the edges are slightly browned.

    Cool for 5 minutes on a cooling rack before serving.

  13. 13

    Best served on top off yogurt and drizzle with extra honey. Enjoy the chewy texture and warm figs!
