Stuffed Eggplant (Bharwan Baingan)

First, wash the eggplants and set them aside to dry. Heat oil in a large skillet and add fenugreek seeds.

Once the fenugreek seeds are cooked, add the ground onions. Sauté until the onions turn light golden.

Grind the ginger, garlic, tomatoes, and green chilies together. Add this mixture to the sautéed onions and mix well. Cook until the oil separates from the masala.

Stuff the cooked masala mixture into the eggplants thoroughly.

Add a little more oil to the skillet and place all the stuffed eggplants in it. Cover and cook.

Once the eggplants are fully cooked, let them rest for 5 minutes. Your stuffed eggplants are ready. Garnish with cilantro leaves and serve.
