Ingredients

Serves 4 servings
  1. 1.1 lbsbeef stew meat (about 500 grams)
  2. 2/3 lbcarrots (about 300 grams)
  3. 14 ozsweet potatoes (about 400 grams)
  4. 1 2/3 cupscoconut milk (about 400 ml)
  5. 2onions
  6. 1 clovegarlic
  7. 2 tablespoonscurry powder
  8. 1 tablespoonground ginger
  9. Olive oil
  10. Salt, pepper
  11. Fresh cilantro
  12. 1little green Tabasco sauce (to taste)

  1. 1

    In a large pot, sauté the onions and garlic in a little olive oil. Add the beef cut into large cubes, brown briefly, and season with salt.

  2. 2

    Add the coconut milk, Tabasco, and spices. Scrape up any browned bits from the bottom. Reduce the heat, cover, and simmer for 1 hour.

  3. 3

    Peel and cut the carrots and sweet potatoes into cubes. Add the carrots to the pot first and simmer for another 40 to 50 minutes.

  4. 4

    Add water if needed to thin the sauce. After 30 minutes, add half of the sweet potatoes.

  5. 5

    Check if the vegetables are tender with the tip of a knife. Steam the remaining sweet potato cubes separately.

  6. 6

    Top the dish with the steamed sweet potato cubes and fresh cilantro before serving.
