Sabudana Kheer / Sago Pudding

Sabudana Kheer is a traditional Indian sweet which is prepared mostly during fasting. It is a very easy and quick recipe which tastes wonderful. It is prepared using sabudana, milk and sugar. Saffron and cardamom powder gives it a very nice flavour. You can even add dryfruits of your choice. It can be served warm or chilled.

First of all wash sabudana with water and soak it in half cup of water for two hours.

Soak saffron in 2 tbsp warm milk and keep it aside. Boil milk in a heavy bottom pan. Now add soaked sabudana to it and cook it until it becomes transparent. Now add sugar to it and cook it for 5 to 7 minutes on medium heat.

Now add saffron milk and cardamom powder to it along with cashew nuts and raisins. Turn off the heat. Let it cool down completely. Chill it in the refrigerator.

Garnish sabudana kheer with almond slivers. Serve it warm or chilled.
