This Mini Carrot bundt cake is spiced with cinnamon, cloves, nutmeg, and a hearty dose of grated carrots making it perfectly moist and Flavourful. You just can't stop yourself with one serving.
And the best part of this recipe is...I make this cake Eggless and with a handful of healthy ingredients..! Replace the all-purpose flour and sugar with whole wheat flour and organic jaggery.
This is a very easy and quick recipe. You can also make this same recipe in a regular Muffin cup or mold.

Whisk jaggery, oil, and butter in the same direction until it becomes smooth and fluffy. Then add vanilla extract, lemon juice, and curd whisk again for a minute.
Mix all dry ingredients together by using Strainer. Now gradually add dry ingredients and milk, mix it well with a soft hand and make the smooth lumps-free batter. - 2
Now add grated carrots, raisins, and walnuts. Combine everything together nicely.

Pour the batter in mini bundt cake mold. (here I use silicone mold which does not require greasing, but if you are using the metal-based mold then greased and line before pouring the batter.)
bake it in preheated oven at 175degree C for 20-25 minutes. - 4
Once the cakes come to room temperature, keep them in the refrigerator for 1-2 hours.
Now for frosting (optional)
Add the cheese and butter to a mixing bowl. Whisk it well until smooth. Then add powdered sugar and vanilla essence beat until smooth, light, fluffy & creamy. Spread these cream cheese over the carrot Cake and topped with some walnuts and grated carrots.
