This is an eggless version of cup cake. In this recipe I use custard powder and it gives a wonderful taste to the cake. The custard powder acts as an egg substitute here. I add Strawberry flavored custard powder in regular recipe and the cupcakes came out so soft, moist and had a very rich flavor.
For frosting I use whipped cream and white chocolate.

Ingredients

  • 3/4 cupall-purpose flour (maida)
  • 1/4 cupStrawberry Custard powder
  • 1/2 cupsugar powder
  • 1 tspBaking powder
  • 1/2 tspbaking soda
  • 1/8 tspsalt
  • 1/4 cupoil +1tsp butter
  • 3/4 cupmilk at room temperature
  • 1/2 tspStrawberry essence
  • For frosting
  • 1/2 cupwhipped cream, chilled
  • 1 tspvanilla essence
  • 2 dropany liquid gel color of your choice
  • 1/4 cupwhite chocolate, melted

Steps

  1. 1

    Whisk sugar, butter, and oil in the same direction until it becomes smooth and fluffy. Then add Strawberry essence whisk again for a minute.

    Mix all dry ingredients together by using Strainer. Now gradually add dry ingredients and milk, mix it well with a soft hand and make the smooth lumps-free batter.

  3. 3

    Pour the batter in each cavity of greased and lined CupCake mold.
    And bake it in preheated oven at 180degree C for 15-20 minutes.

    Once the cupcakes come to room temperature, keep them in the refrigerator for 1-2 hours.
    In a big bowl add whipped cream, food color, and vanilla essence. Whisk for 8-10 minutes or until getting stiff pick by using an electric better. Then add melted white chocolate and whisk again for a minute.

  5. 5

    Pour the cream in a piping bag and frost the cupcake by using any nozzle design of your choice. I use a star nozzle.
