The batter for Carrot malpua or Gajar Ke Malpua is prepared by crushing carrot, adding flour and milk. The mixture is delicately seasoned with cardamoms. It is deep fried in oil, dipped in sugar syrup and served hot by garnishing with crushed pesta or cashew nut.

Use 2 Carrots for this recipe

Cut Carrots in small pieces. Remove both ends of Carrot before cutting

Transfer Carrot pieces in grinder

Add 1/2 cup Milk in grinder

Add 1 teaspoon Sugar in grinder and grind everything

Transfer Carrot paste in a mixing bowl

Add 1/2 cup Suji (Semolina)

Add 1/2 cup Maida (Flour)

Add 1/2 teaspoon Cardamom powder

Add pinch of Salt (optional)

Add 5 tablespoon Milk powder

Add pinch of Red food colour

Add 3/4th cup Milk part by part and mix well to prepare batter

Cover batter for 30 minutes

Prepare Sugar syrup. Add 1 cup Sugar in pan

Add 1 cup Water in Sugar and heat

Add 2 small green Cardamoms

Add 5 Saffrons

Add pinch of Red food colour

Stir continuously

Sugar syrup is sticky. It is ready

After 30 minutes, add 1/2 teaspoon Baking powder in batter and mix well

Add Refined oil as per requirement for deep fry in pan and heat the oil

Add 1 serving spoon batter in hot oil and deep fry

Dip Malpua in sugar syrup and keep in syrup for 10 minutes

After 10 minutes, Carrot Malpua is ready. Garnish with crushed Cashew nuts

Add some more Sugar syrup on Malpua before serving
